Carob-Coconut Fudge Squares

Ingredients
  

  • 1/2 cup coconut butter softened
  • 2 tablespoons coconut oil melted
  • 2 tablespoons carob powder
  • 1 tablespoon maple syrup or date paste omit for strict AIP
  • 1/2 teaspoon vanilla extract alcohol-free for AIP
  • Pinch of sea salt
  • Optional: shredded coconut cinnamon, or freeze-dried fruit for topping

Instructions
 

  • If your coconut butter is firm, gently warm it in a double boiler or warm water bath until soft and stirrable
  • In a bowl, whisk together coconut butter, coconut oil, carob powder, sweetener, vanilla, and sea salt until smooth and glossy
  • Pour into a small parchment-lined dish or silicone mold (an 8x4 loaf pan works well for thick squares)
  • Sprinkle with toppings if desired
  • Freeze for 30–45 minutes, or until set
  • Slice into squares and store in the fridge or freezer in an airtight container
  • Let soften for a few minutes at room temperature before serving for the perfect fudge-like texture
